Been meaning to post this for the past two nights now, but this is what I’ve been eating a lot of as part of a healthy diet: Veggie Ramen with a boiled egg, jam packed with protein and super delicious! I used buckwheat based Soba Noodles in this one but I’ll be honest my absolute fave right now is the white soba (udon) noodles, omg 🤤 In case anyone would like to know, I put: sliced Cavolo Nero, Woodland/Exotic Mushrooms, 1/2 tbsp grated ginger, 1 clove sliced or crushed garlic, boiled egg (obvs) and Soba Noodles of choice. Oh, and last but not least…. Miso paste, which makes the soup base here and is what gives you that good shot of protein 💥💥🥰🥰 (follow instructions as per pack). **make sure you boil your egg and your noodles in separate pans alongside you cooking your veg and miso, you’ll need to drain and soak your noodles in cold water after the stated time on the pack is up and then serve into your soupy veg along with your halved boiled egg (however soft or hard you like it to be).** Add a tiny bit of salt and pepper or chilli to taste and you’re good to go… 💖
